In the Spirit: Pickle Juice Cocktails

From a part-time hobby, to a way to make ends meet during the recession of 2008, to a full-blown pickling production, Phickles Pickles has truly transformed from their grassroots beginning to a thriving, independent business in Athens.

Gone are the days Angie and Phin Tillman’s  friends and family left their money for the delicious Phickles Pickles in a trusty old cigar box on the Tillman’s front porch.  Now you can find them with their very own brick and mortar storefront, complete with a licensed kitchen, gift baskets, and a slight and pleasant aroma of vinegar.

The Phickles Pickles line has grown from just tailgate favorites for a Blood Mary to include seven different vegetables – green tomatoes, beans, carrots, okra, jalapenos, asparagus and cucumbers – and with it, a whole line of new drink recipes.

Pickle juice, from a cucumber or a different pickled vegetable, contains vitamins and minerals, and because it is a fermented food, it is good for digestion, not to mention the salt and water combination can help cure a hangover. Theses pickle juice cocktails curated by the Tillman family will help you create both a spicy night and a healthy tomorrow.

PICKLED BLOODY MARY (Angie’s Bloody Mary)

4 cups pureed stewed tomatoes; made fresh or from a can

1 teaspoon Worchestershire sauce

1 teaspoon prepared jarred horseradish

1/2 cup pickle juice from the jar of any variety of Phickles Pickles

1 cup Vodka or Gin

2 teaspoons Tabasco Sauce

1 teaspoon celery salt

1 teaspoon black pepper

Mix all above ingredients in a large pitcher.

Pour into pint sized glasses filled with ice and rimmed with course salt.

Garnish with a medley of Phickles Pickles (carrot, okra & bean,) a Farmview Beef Stick and a lemon wedge.

Serves 4 ish.

PHICKLE INFUSED VODKA

Combine 3 cups Vodka 

1 cup pickle juice from any jar of Phickles Pickles (I prefer the pickled green tomatoes.)

Add a sprig of fresh dill weed.

Let sit for a few days and enjoy over ice for a no sugar cocktail!

BRINY BLUE RITA ON THE ROCKS

When in season, I make Pickled Blueberries. I call them ‘Briny Blues.’ They are so good in cocktails and a splash of the brine from the jar gives cocktails a pretty blue color!

2 shots of Tequila

1/2 cup freshly squeezed lime juice

1/2 cup freshly squeezed orange juice

1 tablespoon agave nectar

2 tablespoons pickled blueberry juice from the jar

Combine all above ingredients in a shaker with ice and shake to combine.

Pour over ice into glasses rimmed with coarse salt.

Garnish with a skewer of pickled blueberries and fresh lime wedges.

PHICKLETINI

Many bars and restaurants serve this cocktail in Athens and Watkinsville!

2 ounces Gin

1 ounce Phickles Pickle Juice

Mix in shaker of ice and strain into chilled martini glass.

Garnish with Phickles Pickled okra and Pickled Green Tomato

HOT & SKINNY MARGARITA

2 shots Tequila

1/2 cup freshly squeezed lime juice

1/2 cup freshly squeezed orange juice

1 tablespoon agave nectar

2 tablespoons Phickles Pickled Jalapeño Juice from a jar of ‘Hotties’

Shake all ingredients in an ice filled shaker and strain into glasses filled with ice and rimmed with coarse salt. 

Garnish with pickled jalapeño slices and lime wedges.
